Cauliflower Mash

My husband loves my recipe for mashed potatoes so he was a little skeptical when I served this the first time.  He was immediately a convert.  This is the base recipe.  You can add other flavors in and customize it to make sense for what you are serving.  It is wonderful with sharp cheddar cheese melted in. One head of cauliflower will serve 4-5 people.  I use an immersion blender for this but you could use a regular blender or food processor.



Ingredients:
1 head of cauliflower, cut into florets
2-4 tbsps of salted butter, melted
1/2 cup of light sour cream (you can use full fat as well)
Salt to taste

In a deep pot bring about a half an inch of water to a boil.  Add the cauliflower florets to the water, cover, and steam for 10 minutes.  Drain all of the water from the cauliflower and return to the pot (if using an immersion blender, if not place in whatever appliance you will use to puree the mixture).  Any water left in the pot will cause the mixture to become runny.  Pour in the melted butter, about half of the sour cream and season with salt.  I like to start out with a 1/4 cup of sour cream when I begin to blend this and then add more sour cream and salt to taste.  Using the immersion blender, work your way around the pot until the cauliflower has all been pureed and the other ingredients are fully incorporated.  Taste for seasoning and texture and continue to blend and add until you have reached the desired result.  Serve hot.
