Slow Cooker Pulled Pork


This has become an easy favorite in my house.  It may seem strange to add no liquid but the long cook time allows the meat to slowly release liquid.  The garlic cloves help to add a roasted sweetness to the final dish.  We always serve sauce on the side.  Try serving this with rolls or crusty bread, coleslaw or mac and cheese.


Ingredients;
1.5-2lb trimmed pork shoulder
4-5 peeled garlic cloves
4-5 slices of uncooked bacon
1 1/2 tbsp paprika
1 tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
Barbecue sauce

Line the bottom of a slow cooker with the bacon.  Cut 4-5 slits into the top of the pork shoulder and press the garlic cloves down into the slits.  Combine the paprika, brown sugar, garlic powder, onion powder and salt in a small bowl and rub all sides of the pork with it.  Place the rubbed pork on top of the bacon and set on high for 8 hours.  When cooking is complete, remove the pork shoulder to a bowl to shred (you don't want to lose any juices).  Strain out the bacon pieces from the liquid in the bottom of the cooker.  Shred the pork, add back to the juices and serve.
