Slow Cooker Fajitas

My sister is always asking for slow cooker recipes and I recently save that a friend of mine posted that she was serving slow cooker fajitas.  I thought that sounded interesting and I have a great marinade that I use when I cook the fajitas on the stovetop that I thought might translate well.  Plus, I had some peppers that needed to be used up.  This turned out tasty and is a good go to for a simple quick dinner but it does not get the great caramelization you get with the stovetop recipe.  Still was tasty and everyone enjoyed it.  I used cajun seasoning and chili powder but you could choose one or the other.



Ingredients:

2 boneless, skinless chicken breasts
2 sweet onions, sliced into half moons
2 bell peppers, seeded and sliced into strips
2 garlic cloves, minced
2 tsp of kosher salt
1 tsp of garlic powder
1 tsp of onion powder
1/2 tsp of chili powder
1/2 tsp of cajun seasoning
1/4 tsp of cumin
1/4 tsp of oregano
1/2 tsp of agave or honey
Juice of 1 lime plus additional for serving
2 tsp of Olive Oil

For serving:
Flour tortillas, diced avocados, diced fresh tomatoes, shredded cheddar, sour cream, lime, salsa, whatever else you can think of!

Layer half of the onions and peppers in the bottom of the slow cooker and sprinkle the minced garlic over and juice of half of the lime.  Stir together all of the spices and sprinkle evenly over both sides of the chicken breasts while in the cooker so any excess gets on the veggies.  Cover with the remaining onions and peppers.  Drizzle with the agave or honey and olive oil.  Squeeze the remaining juice from the lime over the top and cook on low for 7-8 hours.  When it is done cooking, remove the chicken and shred.  Add back to the pot and stir to combine.  Serve with tortillas and your favorite toppings.
