Beef Chili

I love that such a small amount of meat makes such a huge pot of food.  I like to serve this with diced avocado, shredded cheddar cheese, sour cream, diced onions and corn chips so that everyone can make their own special bowl.  I also served homemade cornbread on the side.  If you would prefer this to be less spicy, remove the seeds and membrane from the jalapeño.  

Ingredients:
1 lb of lean ground beef
1 onion, diced
1 green bell pepper, cored and sliced
1 jalapeño pepper, minced
3 garlic cloves, peeled and minced
1/4 cup chili powder
1 tsp salt
2 tbsp soy sauce
2 tsp Worcestershire sauce
32 oz chopped tomatoes
1/2 cup chicken broth
1 can each black, pinto and white beans, drained and rinsed
Canola Oil

In a large dutch oven or pot, heat a small amount of oil over medium heat.  When the oil is hot, add the ground beef.  Brown the meat, breaking up as it cooks.  Once all of the meat is browned, add in the onion, bell pepper and jalapeño.  Stir into the meat and allow to cook for 5 minutes.  Add in the garlic and cook for 3 minutes more.  Next stir in the chili powder and salt and stir for 1 minute.  Add in the tomatoes, soy sauce, chicken broth and Worcestershire sauce.  Last add in all of the beans and stir to combine.  Simmer for 45 minutes.  Taste for salt and serve with toppings of your choice.
