Sausage and Peppers Pasta with Broccoli Rabe

I came up with this recipe when my husband came home from the butcher with 3 italian sausage and I could think of what the heck to do with them.  I had a pepper that was about to go bad and I always have onions.  My daughter loves pasta so I thought why not!  Everyone loved it.

Ingredients
3 Italian sausage links
1 onion, cut in half lengthwise and then sliced into half moons
1 green pepper, cut in half, seeded and cut into strips
2 cloves of garlic, minced
1 cup of white wine
1/2 cup of chicken stock
1 jar of store bought or or 4 1/2 cups of homemade spaghetti sauce
1/2 box of your favorite pasta shape, I used mezzi rigatoni
Grated Parmesan cheese
Olive oil
Salt and pepper to taste

Preheat oven to 400 and roast the sausage for 30-40 minutes until browned and cooked through.  Put on water to boil for the pasta. Meanwhile, in a large pot or dutch oven, heat small amount of oil over medium heat.  Add onions and peppers and stir until softened, about 8 minutes.  Add in the garlic and stir for one more minute.  Turn up the heat to high and add in the white wine.  Let the white wine reduce until almost completely evaporated, about 3-5 minutes.  Add in the chicken stock and spaghetti sauce and bring to a boil then reduce to a simmer.  Remove the sausage from the oven and cut on the bias into 1/4 inch rounds and then add to the pot, simmering for at least 10 minutes. Add salt and pepper as needed. Salt the pasta water and put the pasta in to cook.  Drain the pasta and add to the sausage mixture.  Stir to combine and then top with grated Parmesan cheese to taste and serve.



Ingredients
1 bunch of broccoli rabe
2 cloves of garlic, sliced
Red pepper flakes
1/2 cup of chicken broth
Olive oil
Salt and pepper

In a large pot, bring water to a boil.  Slice the garlic and set aside.  Rinse the broccoli rabe and cut off the woody bottoms.  Heat a large sauté pan over medium heat.  When the water comes to a boil, salt it and drop the broccoli rabe.  Blanch for 2 minutes.  As soon as the broccoli rabe goes in the water, add oil to the hot pan, put in the garlic and a few dashes of red pepper flakes.  Keep an eye on the garlic, let it brown but not burn.  Take the broccoli rabe directly out of the hot water and into the hot oil, tossing to coat, add in the chicken stick and cover.  Bring to a boil and then reduce to a simmer until cooked and tender about 4 minutes.  Serve hot.
