My Grandmother's Danish Meatballs with Sauce Piquant

These meatballs always make me think of the holidays at my childhood home! They make a great make ahead appetizer for any party.  Simply reheat when you are ready to serve.


Ingredients:

For the Meatballs
1 lb. ground beef
1 small onion grated
1/2 cup dry bread crumbs
1 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
2 large eggs
1/2 cup of whole milk
3 tbsp oil
1 can condensed beef consommé

For Sauce Piquant:
2 tbsp flour 
3 tbsp water
2 tbsp sweet pickle relish

Combine ground beef, onion, bread crumbs, seasoning, eggs and milk in a bowl. Mix with a fork or your hands until well combined.  Shape into small (bite size) balls and brown on all sides without crowding the pan a few at a time in heated oil in a skillet.  Set-aside on a paper towel until all meatballs are browned. Drain off all of the fat from the pan and return all meatballs.  Pour consommé over, cover and simmer for 15 minutes or neil cooked through.  Remove meatballs from liquid.

Pour the liquid from the pan into a heatproof 1 cup measure.  Add water if needed to make 1 cup of liquid.  In a separate bowl, combine four and water and which into meatball liquid mixture.  Return liquid to hot pan and cook, stirring constantly until the liquid thickens and boils, about 1 minute.  Stir in sweet pickle relish and return meatballs to pan to heat and coat with sauce.  Serve and enjoy!
